Sauces & marinades

Ingredients

  • 1 kg chicken breast
  • 3 tbsp olive oil
  • 2 heaped tbsp tomato purée
  • 2–3 garlic cloves, finely chopped
  • 1 tbsp lemon juice
  • 1 tsp honey
  • 1½ tsp dried thyme
  • 1 tsp oregano
  • 1 tsp paprika
  • Pepper to taste
  • Celery salt to taste
  • 6–10 fresh basil leaves, finely sliced

Sauces & marinades

Method

  1. Mix the olive oil, tomato purée, garlic, lemon juice, honey, thyme, oregano, paprika, pepper and celery salt.
  2. Add the fresh basil and mix again. Add cumin and balsamic if using.
  3. Coat the chicken breast all over with the marinade.
  4. Marinate for 2–4 hours.
  5. Cook the chicken breasts on a moderately hot barbecue or grill. Turn them during cooking and prevent the tomato purée and honey on the outside from burning.
  6. Preheat the oven to 180 °C. Arrange the chicken breasts in a single layer in a baking dish and cook for about 20–30 minutes, depending on their thickness.
  7. For every cooking method, measure the core temperature in the thickest part of a chicken breast. The chicken is safely cooked at a minimum of 75 °C. Rest the chicken breasts for about 5 minutes before slicing. Cooking time is a guide; core temperature determines whether the chicken is done.

Flavour profile

Tomato, thyme, garlic and basil give the chicken a rich Mediterranean flavour.
